Generally, I eschew the use of
corn meal, but you could substitute oats and/or
almond meal for the corn meal. Meanwhile, the use of actual
corn kernels, and the absence of
white sugar in this
great recipe for wheat-flour-less (and sugar-less) cornbread, attracted me to it--I'm putting this on my list to adapt, when my kitchen is done. Try using
agave in place of the honey...
